Tom Buller is the horticulture extension agent for K-State Research and Extension- Douglas County, Kansas and a farmer who has been growing vegetables organically in the Kansas River Valley since 2006. He co-authored “Growing Under Cover: A Kansas Grower’s Guide” and “Growing Over Cover: A Kansas Specialty Crop Grower’s Guide to Cover Crops” with partners at the Kansas Rural Center and K-State Research and Extension.

Along with his wife, Tiffany, and their seven children, Brad owns and operates Serenity Farm, a regenerative and organic (not certified) diversified market farm near Wichita, Kansas. They have been growing a wide variety of seasonal vegetables (year round), pastured pork, chickens, eggs, and any value added items they dream up since October 2014. Their products are sold through a four season CSA, an online store with home delivery, and restaurant sales.

Making Value-added Products on Small Farms to Reduce Waste and Add to the Bottom Line | Recording I will be giving practical ideas learned from our three SARE research projects that any small farm can adopt. Our value-added products have reduced waste by turning market returns and seconds into valuable products which have increased our sales and attracted faithful customers. Value-added products have accounted for 35% of sales during the summer and 50-60% of sales during the leaner months. Jason Grimm is the Executive Director at Iowa Valley Resource Conservation & Development. Jason works with Iowa farmers and businesses as a value chain coordinator connecting producers to each other, to viable markets, and cultivates relationships within the food system. Jason manages his own farm business marketing specialty crops across the state of Iowa. He holds a Bachelor of Landscape Architecture and Environmental Studies from Iowa State University.
Anuj Mittal is a faculty member in the Industrial Engineering Technology department within the School of Engineering at Dunwoody College of Technology. Anuj holds a B.S. in Electrical Engineering from University of Delhi, India, and a M.S. and Ph.D. in Industrial Engineering from Iowa State University. His research interests include developing quantitative methodologies to study and propose effective design strategies of systems focused on promoting environmental, social and economic sustainability. Current application areas include regional food supply chains, renewable energy systems and food waste management.
